Surely once someone is offside and they touch the ball, it's offside so irrelevant what then happens?

The idea is that if the linesman flags immediately and play is stopped if VAR shows it was the wrong decision you can't go back. If they let the play conclude and then flag if VAR shows they were wrong any goal scored can stand.That's fine, but if the linesman is going to give offside anyway, what's the point?
