Went o a five guys in London extremely expensive and very bland, it's quirky cuz they leave bags of spuds on the floor to give the impression the chips are fresh.
Also done a hand made burger in Nottingham with the same results, burger tasted like cardboard.
However my daughters think they are wonderful, no surprises there!!!
It seems if you make something very expensive and a bit quirky the younger ones with loads of money (ha ha) think t's great.

Yep. Agree on the independent restaurant angle. Would much prefer it, but the capitalist world we live in now seems to promote the idea that everything should grow and grow and grow and you should start chains and expand and try and take over the world.
Not a restaurant I know, but Wilkinson's is a family run firm. They started off quite small, then grew and grew to a certain size. They were a great place to work for and it had a lovely feel about the place.
Now they are trying to conquer the world and sprout up everywhere and everything is now about profit and balance sheets and nowt else. It's now not a nice place to work and it's lost its family appeal.
That's what happens with chains. They sprout up everywhere and then there is a sameness, cos you can go to any city and get the exact same food in the exact same restaurant.
The Cathedral Lanes one I do believe WILL be a chain, so that's why I asked. Would much prefer an independent place for sure.

Yes, indeed. Guessing the vast majority start off small. So many though aren't just happy with what they've got and want to expand and branch out. That's when you tend to lose the individuality.I may be wrong but I think a lot of the big chains start off as small independent places then expanded into major chains, quite a few using the franchise model.
I think a couple even started as stalls at festivals. The problem is there are so many of them it's really squeezing the opportunities for the smaller independent operators.

I went to a Digbeth Dining Club event at Coventry Cathedral last year (2016) Had to put 2016, cos 'last year' makes it sound a long time ago.If you're looking ofr something a bit different to eat try one of the street food events.
I've never been to Digbeth dining club, (was going to go when it was at Cov catherdral in December but it got cancelled, hopefully it will be back soon), but it's on every Friday in Birmingham. I've been to similar events elsewhere and would highly recommend them.
They basically have stalls selling various street food from around the world and they do tasters.
I had some South Korean and Eritrean food and it was fantastic.
