See title.

I just wanted to share as I've been well proud of myself and hoping by end of the year to have the confidence to cook for her mother.

Cá hấp - steamed fish, we chose a golden pompano. It is steamed with long sliced green onion and ginger, with pâté spread on toasted bánh mì



Chả cá thăng long - tumeric and dill fish, for this we used whiting. Fried in a sizzling pan with onion and served with a fermented shrimp paste sauce. Also featuring steam clams and lobster. Brown/red rice as a change of pace. Pickled carrot & daikon. Chili paste. Blanched crunchy bok choy vegetable.


Thịt thỏ kho - braised rabbit, topped with green onion and spicy red Thai peppers

Not that it matters, do i take it that your wife and her mother are Vietnamese? What a lovely warm people they are - and this food looks absolutely exquisite. Good job!

Yes. She is American born to Vietnamese parents.

And it was quite tasty. I've only had rabbit once, at a restaurant years ago in a stew. Nobody puts it on the menu here.

My hands suffered flashing hot oil spray but only hurt for a bit. Fish was lovely in taste and texture.

There are several Asian supermarkets in my local area here in Atlanta, USA. Bought already cleaned and ready to cut and cook.

Anything you want from beef, chicken, whole goat, whole lamb, shellfish, Asian fish and seafood (fresh, live), Vegetables and fruits not found in ordinary American markets, seasonings, etc.

My local has it on their menu seasonally, and the French love it. Go to Malta and it's their national dish

Probably talking about Canh chua? Vietnamese Sweet & Sour Soup (Canh Chua) - Cooking Therapy

A sour sweet soup made from a stalk called an elephant ear? If so, yes, and extremely tasty. It's on my to do list for next week I think.

Ca tai tuong chien. It's deep fried, then they stand it up in a plate rack and you attack it with chopsticks to take the flesh off.
It's giant gourami - which might be known in your neck of the woods as golden redfish.
It's amazing!

I'd love to travel there one day, been to Thailand and Malaysia a few times. I've always fancied the reunification express Ho Chi Minh to Saigon

It's amazing, Gynn. I only did the northern bit from Hanoi to Hue (overnight) - would love to do the whole 48 hours!

Where else did you stop, looks a great adventure, a bit more rough and ready than Thailand, I can imagine the food is amazing too

Good idea! I absolutely love cooking and baking. I'm no professional but every time I do a meal for friends, I always receive great praise. My signature dish is Beef Rendang. Bloody love it!

I also make the most simple fruit cake. Must have made about 30 or so over the years. Dead easy recipe too!

Is that similar to Dundee cake or more fruit in it?

Not a Dundee cake, Wingy, just a dead easy cake with mixed fruit (or whatever main fruit you want). Just having dinner so I'll post it up in a bit.

Tonight's meal was simpler and way less prep.
Gà Nướng Sả - A lemongrass garlic chicken served with rice noodle and the assorted usual suspect side vegetables.
Nước chấm - a commonly used vinegar condiment including fish sauce, chili pepper, garlic, for dipping your meat or veggies or drizzling atop the plain rice noodl3.

John, you need to stop, for the sake of my marriage! My wife is a fabulous cook, but you, my friend, are making me doubt my life choices. I don't care if i have to emigrate to GA!
